Hummingbird Bakery's Carrot Cake extravaganza - usually a 4-tier construct, but in my case an Aztec mound. It's definitely THE BEST carrot cake recipe around: moist, lots of carrots, nutty and the cream-cheese icing is deliciously zesty. No butter, but pots of sunflower oil and equal amounts of sugar, so you can take a view on the "healthiness" of it.

Hummingbird Bakery: Strawberry Cupcakes

The coming together of two great institutions - Hummingbird Bakery and Park Side Farm in Enfield has meant that we were able to produce this fab creation. Granny & Grandpa are visiting so we went to do some PYO at our local, Parkside. We picked punnets and punnets of strawbs (honestly, you can't believe how much we came home with!) and I'd got the Hummingbird recipe off Charlotte. It took a day or two to get all the ingredients prepped and little people at the ready, but we now have a plate of 15 cupcakes with strawberries at the bottom, vanilla sponge on top of that, and then a cream cheese icing topping, finished with crumbled digestive biscuits. The combination of which is quite sublime.

carrot cake muffins

I have no idea where I got this recipe from, but I'd obviously downloaded it from the printing. It's a carrot cake recipe which is high in oat & apple content, and very low in fat. It doesn't use the perennial vegetable oil, but half a cup of butter instead. Bad for you ? you decide. It has 2 eggs and one extra egg white which means it's lovely and light. Personally I enjoy something a bit heavier in the carrot-cake genre, but this is not a bad offering.
Frosting (icing) is a-la Nigella. You need to be generous on the lemon or lime juice tho' to offset the carrot and oat flavour.
